During the workshop, you will learn how to make homemade culurgionis following the original recipe, mastering the unique closure technique (sa spighitta), just as our grandmothers used to do. Our traditional Sardinian pasta workshop will immerse you in a truly authentic and unforgettable experience.
For more than four decades, our family has been a leader in fresh pasta production. Lidia Muceli, our master pasta maker and chef, is the owner of the first traditional Sardinian pasta factory in the village of Jerzu, in Ogliastra. Culurgionis are a humble yet iconic dish, deeply tied to Sardinia’s agropastoral heritage. Despite their simple ingredients, their unique flavor wins over everyone who tries them. But it’s not just their taste that makes them special—they hold deep cultural and symbolic significance. In ancient times, culurgionis were offered as a gift to the Mother Goddess, a symbol of gratitude for a bountiful harvest. Their signature closure, shaped like a wheat spike (Sa Spighitta), originates from this sacred tradition. There are many fascinating stories and customs linked to culurgionis, and we’ll explore them together during our Culurgionis Workshop in Ogliastra!
Our Culurgionis Workshops in Ogliastra take place in our villa, nestled in the peaceful Jerzu countryside. Surrounded by olive groves and vineyards, it is the perfect setting for an authentic and immersive experience.
The culinary journey begins with a brief introduction and the distribution of the necessary equipment—a chef’s apron and hat—before diving into the fascinating history and traditions of Culurgionis from Ogliastra.
After a guided tasting of the fresh ingredients used for the culurgionis filling, we will start making the fresh pasta and filling, step by step. Once the dough and filling are ready and have cooled, we will move on to the most delicate part: closing the culurgionis using the traditional "spike" technique (Sa Spighitta).
Together, we will craft our culurgionis, and at the end of the workshop, you can choose your preferred way to enjoy the experience:
