Ogliastra Culurgionis

Our most iconic dish, Culurgiones of Ogliastra, is a celebration of tradition. You can enjoy them in the classic style, served with tomato sauce and pecorino cheese, or explore creative variations like those with mullet roe, pancetta and pistachios, or a delicious walnut pesto. Each topping enhances the delicate flavours of this stuffed pasta, offering a unique sensory journey.

Cheese Culurgiones

Our Cheese Culurgiones melt in your mouth, offering a symphony of rich and harmonious flavours. Whether simply served with a drizzle of extra virgin olive oil and a sprinkle of parmesan, or accompanied by a fresh tomato sauce, they are a dish that will leave a lasting impression on our guests.

Malloreddus

Handmade in our Home Restaurant, Malloreddus are little pockets of flavour that embody the authenticity of Sardinia. Slow-cooked Suckling Pig

Our slow-cooked suckling pig is a true delight for lovers of traditional cooking. After about 8 hours of slow roasting on aromatic mirto leaves, the meat becomes incredibly tender and full of flavour. Each bite captures the essence of Sardinia, with the intense notes of myrtle enhancing the meat’s succulence, offering a unique culinary experience.

 

Shepherd’s Skewers

Our shepherd’s skewers, made with goat and sheep meat, are an explosion of flavours. Seasoned with fresh herbs from our garden and marinated in our Cannonau wine, each bite is tender and full of taste. Perfect for those who want to savour the authenticity of pastoral traditions, these skewers will captivate your senses.

Seadas

Pappai Biancu

Rabdomante

Some people have the magic touch to sense the energy bursting from the heart of the earth. This same energy nourishes the vines, making every grape a precious gift. With these skilled and attentive hands, we turn that fruit into a true nectar of the Gods: Il Rabdomante.

A wine that captures the strength of the earth and the mystery of its ancient connection to mankind. Each glass reveals the essence of our land, a journey through flavours and aromas that tell the story of Ogliastra.

 

Fudòra

Fudòra is born from vineyards rooted in the granite soils of Cardedu, absorbing the sun and scents of this unique land. A ruby red wine, with an intriguing bouquet of vanilla, cinnamon, and ripe plum, enriched by hints of herbs like bay leaf. On the palate, the balance between bold tannins and lively acidity combines with a full-bodied richness and characteristic alcohol. An authentic Cannonau, evolving with elegance, embodying the strength and freshness of Sardinia.

Olive Oils

At our Home Restaurant in Jerzu, every detail is designed to offer you an authentic Sardinian culinary experience, and nothing represents our connection to the land better than our organic olive oils, made with passion and dedication: SaPè and Su Connottu.

SaPè

SaPè comes from our olive groves in Sarrala and Pelau, each with its own story and deep connection to the land. The oil produced in Sarrala is certified organic, ensuring an environmentally friendly and traditional cultivation process. In Pelau, although not certified, the oil still follows organic practices, preserving the purity and natural essence of our land.

Every drop of SaPè captures the essence of Ogliastra: the olive trees thrive under the warm sun and winds that shape the landscape. The result is an intense and aromatic oil, perfect for complementing the genuine flavours of Sardinian cuisine. SaPè is the oil we use for every dish in our restaurant, bringing the authentic and unmistakable taste of our land to your table.

Su Connottu

Su Connottu, produced in the olive grove of Pelau in the Sa Spadula area, tells a family story. The name “Su Connottu” means “the known,” a nod to the ancient knowledge passed down through generations. My mother’s grandparents had an olive mill, and this oil is a tribute to their tradition and expertise.

We are also proud members of the Tertenia olive mill, where our olives are carefully processed using traditional methods. This allows us to ensure the highest quality oil, respecting both traditional and sustainable practices.

Su Connottu has a bold flavour, perfect for enhancing the most authentic dishes of our cuisine. Every drop is a journey through my family’s history, our territory, and the culture that makes us unique. Serving it in our Home Restaurant in Jerzu is an act of pride and gratitude towards our land.
