Coccoi prena is a traditional dish from Ogliastra. Unlike many other local specialties, coccoi prena wasn’t reserved for festive occasions but was a humble, everyday meal enjoyed during the week. Simple yet bursting with flavor.
The name comes from the Sardinian word coccoi, meaning “bread”, and prena, meaning “filling”—literally, “stuffed bread”. Coccoi prena is made from bread dough, shaped into small rounds and filled with wholesome ingredients like potatoes, fresh mint, fiscidu (a local cheese), pecorino, garlic, and extra virgin olive oil.
Traditionally, coccoi prena was baked in a wood-fired oven on the same day as bread-making. To prevent sticking and to infuse a unique aroma, the pastries were often placed on cabbage or vine leaves during baking. Once cooked, they were left to cool in handwoven baskets called is palinisi.
These soft-centered stuffed pastries were a staple for Ogliastra’s shepherds. Their 2–3 day shelf life made them perfect for taking to the pastures, preserving their delicious flavor throughout the journey.
Over time, a modern version was introduced alongside the traditional leavened dough: coccoi prena made with hard dough. This variation skips the leavening process, reducing prep time and offering a delightful contrast between the crispy crust and soft filling.
Our Coccoi prena workshop in Ogliastra, takes place in the peaceful countryside of Jerzu, just a few minutes from Cardedu. The class is led by Lidia Muceli, owner of Muceli & Lotto pasta factory and a master pasta maker with over 40 years of experience.
During the workshop, you’ll learn step-by-step how to prepare traditional coccoi prena — starting with the dough, moving on to the filling, and finishing with the baking process.
Upon arrival, you’ll be welcomed into our rustic country home, where we’ll provide you with a cooking apron and a chef’s hat. After a short introduction and getting to know each other, we’ll begin the hands-on workshop, which lasts around two hours.
We’ll start with a tasting of the fresh, local ingredients that give coccoi prena its unique flavor. Then, we’ll dive into preparing the dough and the flavorful filling, shaping the coccoi prenas into their iconic sun-like design.
Once the prep is complete, we’ll move on to the baking process. Lidia will share her expert tips and secrets to achieve the perfect bake every time.
